This interesting Japan Green is named in tribute to the great Japanese tea master that codified what has since become known as the Japanese Tea Ceremony back in the 1300's. Rather than being steamed in the "killing-green" stage of processing (as is the case with most Japanese Greens), these tender young leaves are pan-fired in the manner of many Chinese Greens - using a method the Japanese adopted from the Chinese during the 17th century.
